Slow Cooker Chicken Teriyaki with Warm Ginger Slaw
We are addicted to this super easy weeknight meal!

Ingredients

  • 2 lb boneless skinless chicken thighs, breasts or a mix of both

  • 1 jars/bags Teriyaki Marinade, Primal Kitchen, Noble Made, or Kevin’s Brand

  • Warm Ginger Slaw
  • 1 TSBP avocado oil

  • 12 oz Bag of coleslaw mix

  • 1 cup Shredded carrots

  • 1 small red onion sliced into thin moons

  • 1/2 TBSP Trader Joe’s Chili Onion Crunch (or sub 1 large garlic clove and 1/4 tsp red pepper flakes)

  • 1/4-1/2 TBSP fresh grated ginger, or one frozen ginger cube (add more or less depending on preference)

  • 2 TBSP green onions, diced, green part only

  • 1 bag Steam-in-the-bag Jasmine Rice

  • Sesame Oil (optional)

Directions

  • -In a large slow cooker, add the chicken and teriyaki sauce. Cook on low for about 4-6 hours.
  • 30 minites before you are ready to serve dinner, begin making the slaw.
    In a large sauté pan, heat up 1 tbsp oil, add the red onion, and sauté for 2 minutes.
  • Add the coleslaw mix and carrots, season with a little salt and cook for 2 minutes.
  • Add the fresh ginger and Chili Crunch, cook another 2-3 minutes
  • Top with green onions. Season with salt to taste.
  • Serve with steam- in- the bag Jasmine rice.  If your feeling extra fancy, drizzle the rice with a little sesame oil and extra chopped green onions.
