Julie’s Egg Roll in a Bowl (perfect Trader Joe’s dinner)

Ingredients

  • 1 lb grass-fed ground beef

  • 2 bags coleslaw mix

  • 2 large carrots grated (or about 1 cup)

  • 1/2 red onion sliced thin

  • 2 large garlic cloves minced

  • 1/2 tsp fresh grated ginger, or one frozen cube of ginger

  • 1/2 cup coconut aminos

  • 1 tsp Crunchy Chili Onion (Trader Joe’s brand or alternative)

  • 4 eggs scrambled

  • 2 scallions diced, green parts only

  • 1 tsp sesame oil

Directions

  • In a large skillet, heat 2 tsp oil of choice, (I use avocado) over medium heat. Add your ground bee.f. Cook, breaking apart the meat for about 5 minutes
  • Add your garlic and onion to the beef. Cook another 2-5 minutes, or until the onion is soft.
  • Add the coleslaw, carrots, coconut aminos and ginger. Combine and cook for 5-10 minutes, or until cabbage has softened. 
  • While the beef/veggie mixture is cooking, scramble the eggs on a separate pan. 
  • Add the eggs to beef mixture, top with green onions and drizzle of sesame oil.
