1 lb grass-fed ground beef
2 bags coleslaw mix
2 large carrots grated (or about 1 cup)
1/2 red onion sliced thin
2 large garlic cloves minced
1/2 tsp fresh grated ginger, or one frozen cube of ginger

4 eggs scrambled

Directions
- In a large skillet, heat 2 tsp oil of choice, (I use avocado) over medium heat. Add your ground bee.f. Cook, breaking apart the meat for about 5 minutes
- Add your garlic and onion to the beef. Cook another 2-5 minutes, or until the onion is soft.
- Add the coleslaw, carrots, coconut aminos and ginger. Combine and cook for 5-10 minutes, or until cabbage has softened.
- While the beef/veggie mixture is cooking, scramble the eggs on a separate pan.
- Add the eggs to beef mixture, top with green onions and drizzle of sesame oil.
