Coconut Thai Noodle Stir Fry using Kevin’s Chicken

Easy weeknight dinner using the brand Kevin’s pre-cooked chicken. You can usually find this chicken in with the sausage and bacon section of your grocery store.

Ingredients

  • 1 package Kevin’s Thai-Style Coconut Chicken

  • 1/2 red onion sliced into thin moons

  • 1 large Bell Pepper (I like orange or yellow)

  • 1 bag organic broccoli slaw

  • 2 cups Miracle noodles (low carb) or thin rice noodles

  • 1 tbsp Braggs Coconut Aminos

  • dash fresh lime juice (optional)

  • 1 tbsp coconut or avocado oil

Directions

  • Add half of the oil to a large skillet and set to medium-high heat. Brown the Kevin’s chicken in the oil. Once browned, set the chicken aside in a separate bowl.
  • Add the remaining oil to the skillet and lower the heat to medium. Add the onion and pepper. Slowly cook for about 5 minutes until softened. Add the broccoli slaw. Saute for another 5 minutes or until the veggies are soft.
  • While the veggies are cooking, rinse the Miracle noodles, or cook your rice noodles and set aside.
  • Add the noodles, chicken, Kevin’s Thai sauce packet, and the amino acids to the skillet.
  • Let the stirfry cook for an additional 5 minutes or so. Finish with a little dash of lime juice.
