“Boosted” Box Muffins

I love the Go Nana’s muffin mixes. They call for bananas, but my family prefers pumpkins. I like to boost the nutrients with a few add-ins, and skip the added maple syrup! Go Nana’s mixes can be found at Whole Foods, Target and Amazon

Ingredients

  • 1 package Go Nana’s Muffin Mix- original, chocolate chip or double chocolate

  • 1/2 heaping cup Pumpkin puree

  • 1 Egg

  • 2 TBSP Milk of choice

  • 2 TBSP plain Greek yogurt or avocado oil if dairy-free

  • 1/2 cup ground flax meal

Directions

  • Preheat the oven to 350 degrees. Line a 12-cup muffin tin with parchment paper muffin liners.
  • Add all the wet ingredients to a large mixing bowl. Whisk together.
  • Add the Go Nanas mix and flax meal to the wet ingredients. Gently combine with a spatula.
  • Portion the mix into the muffin tin and bake for 22-25 minutes or until cooked.
  • Store in an airtight container. They will last longer if you keep them in the fridge, or you can freeze and reheat them as needed.
