“Boosted” Box Muffins

minutesI love the Go Nana’s muffin mixes. They call for bananas, but my family prefers pumpkins. I like to boost the nutrients with a few add-ins, and skip the added maple syrup! Go Nana’s mixes can be found at Whole Foods, Target and Amazon
Ingredients
1 package Go Nana’s Muffin Mix- original, chocolate chip or double chocolate
1/2 heaping cup Pumpkin puree
1 Egg
2 TBSP Milk of choice
2 TBSP plain Greek yogurt or avocado oil if dairy-free
1/2 cup ground flax meal
Directions
- Preheat the oven to 350 degrees. Line a 12-cup muffin tin with parchment paper muffin liners.
- Add all the wet ingredients to a large mixing bowl. Whisk together.
- Add the Go Nanas mix and flax meal to the wet ingredients. Gently combine with a spatula.
- Portion the mix into the muffin tin and bake for 22-25 minutes or until cooked.
- Store in an airtight container. They will last longer if you keep them in the fridge, or you can freeze and reheat them as needed.
