
Protein Pancakes Basic Recipe
Recipe by Julie RadebaughThis is my go-to breakfast. Fuel your morning with more than 30 grams of protein and 6 grams of fiber! Make it pumpkin-flavored by adding 2TBSP of Pumpkin Puree and Pumpkin Pie spice instead of cinnamon. Craving Chocolate? Use Purely Elizabeth Dark Chocolate Oats instead of cinnamon. The options are endless!

1/2 cup
low-fat cottage cheese (Good Culture is my favorite brand)1/2 cup Egg Whites (I buy liquid, but you can use fresh)
1 packet
cinnamon instant oats (I use Purely Elizabeth)1/8 tsp Baking Powder
1/8 tsp Ground Cinnamon
Directions
- Add all ingredients to a high-speed blender and blend for about 30 seconds. Let the mixture sit for a few minutes; scrape the sides.
- While the batter sits, preheat a non-stick pan over medium heat.
- Spray the pan with a neutral oil and pour the batter onto the pan.
- Cook low and slow; flip once tiny bubbles begin to form.
You can choose to make one large pancake or three smaller pancakes. The batter will be slightly runny. I find one large pancake easier.
Top with fresh fruit and 1 tsp maple syrup- *Make it Pumpkin by adding 2TBSP fresh pumpkin puree and sub-Pumpkin Spice for the cinnamon. Craving Chocolate?! Try this with the Purely Elizabeth Dark Chocolate instant oats. The options are endless! Enjoy!
